Pansie Hudson always had a passion for baking, working for many years in the hospitality industry and managing a bakery in the Cayman Islands, where she is originally from.
“I became passionate about baking,” she says, “And then I decided to do something here in Canada, but it has been on my mind for many, many years.”
Pansie specializes in cakes infused with alcohol, but also has non-alcoholic options for those who just want something tasty.
“In Jamaica we have a traditional Christmas cake, which is a dark cake that we soak in fruits for many months,” Pansie explains, mentioning Hudson Spirit Cakes are like the traditional rum cakes but are a bit different. “Everybody goes for the sweet treat. It feels good to have something different on the table.”
As Pansie started distributing her cakes, the feedback was overwhelmingly positive and that’s when she decided to get serious about her dream.
“I love to make people feel good,” Pansie says. “My passion is just making people happy.”
Recognizing she needed additional tools and knowledge to make her business idea a reality, she enrolled in Momentum’s Self Employment program.
“I actually started with Momentum and a business idea,” she says. “I didn’t know how to start. I got [business] coaching and got to work in a group of like-minded people. It motivates you to see that there is opportunity in what you want to do.”
Hudson Spirit Cakes is now open at the CrossRoads Market and Pansie is very excited about being in a new space, as she used to be at Granary Road Farmer’s Market which wasn’t a great fit for her business due to its location. Her sales have increased since.
“It’s a fantastic location. Last week was one of my best weeks,” She feels really connected to the community.
